As part of the £450 million regeneration of Oldham town centre, the new market at The Spindles brings independent traders, food and community back to the heart of the town.

At the centre of that is Hen House.

A well established local business with over 30 years of history, built on loyal customers, consistency and craft. It is now stepping into a new chapter in a modern market environment.

The Jordon Group, part of Bellrock, delivered a full food-to-go fit out. This included refrigeration, serve over counters and back of house areas, all designed to support the next stage of growth.

The Challenge

This was not a new concept starting from scratch.

Instead, it was an established business moving into a completely new environment.

The challenge was clear. Retain everything customers value, while creating a space that can handle higher footfall and a faster pace of trade.

As a result, the environment needed to support volume without losing identity.

Every element had to work together. Layout, refrigeration, counters and back of house all aligned to support consistent performance.

The Solution

The design focused on how the business operates day to day.

Serve over counters create open sightlines. This allows customers to see the full offer while maintaining the theatre that sits at the heart of Hen House.

At the same time, refrigeration was integrated across both front and back of house. This supports fresh food display while ensuring reliable storage behind the scenes.

Cold rooms and storage areas were designed to handle increased demand. As a result, the team has the capacity needed for a high footfall market setting.

Behind the counter, prep areas support efficient movement. This reduces friction and enables consistent output throughout the day.

Overall, the result is a space that reflects the brand’s heritage while enabling it to operate at a different scale.
